Mixed Berry Oatmeal Waffles with Cinnamon Syrup (V+GF)

These fluffy Mixed Berry Oatmeal Waffles with Cinnamon Syrup are what you need for your next brunch!  No one will ever guess they're vegan and gluten free.

Ingredients

Berries

  • 2-3 c. hulled and chopped strawberries
  • 1 c. blueberries
  • 1 tsp. sugar or sugar alternative

Flax Egg

  • 3 tsp. ground flaxseeds (24 g)
  • 6 Tbsp. water (90 ml)

Wet

  • 2 c. almond or cashew milk (474 ml)
  • 2 Tbsp. apple cider vinegar (30 ml)
  • 4 Tbsp. maple syrup (60 ml)
  • 4 Tbsp. non-GMO canola oil (60 ml)
  • 2 tsp. vanilla extract 

Dry

  • 1 ½ c. dry quick oats (120 g)
  • 2 c. Bob's Red Mill gluten-free all-purpose flour (320 g)
  • 3 tsp. baking powder
  • 1 tsp. ground cinnamon
  • ½ tsp. salt

Cinnamon Syrup

  • 1 ½ c. pure maple syrup (356 ml)
  • ½ tsp. ground cinnamon

Instructions

  • Start by pre-heating your waffle iron.
  • Stir together the berries and sugar in a bowl and set it aside for now.
  • Next, add the FLAX EGG ingredients to a small bowl and set it aside, as well.
  • Then, place all WET ingredients in a small bowl and set IT aside!
  • In a medium mixing bowl, stir together all of the DRY ingredients. Afterwards, add the WET ingredients to the DRY mix and stir well to combine.
  • Once that’s done, stir in the FLAX EGG as well. For best results, allow batter to sit for 5-10 minutes before making your first waffle.
  • Grease your piping hot waffle iron by spraying it with oil or by applying melted non-dairy butter with a pastry brush.
  • Add batter to the greased waffle iron until it’s about 2/3 full and then immediately shut the lid. Cook for about 3 -4 minutes or until golden brown. It’s usually best to let it cook a little longer than you think you should!
  • Carefully and very slowly open the lid and use the tines of a fork to help remove the waffle from the iron.
  • Repeat steps 7 – 9 until all of the batter is used, about 5 - 6 waffles total.

For the Cinnamon Syrup

  • Simply add the two ingredients to a saucepan over medium heat and mix them together with a fork until all cinnamon is incorporated and the syrup is warmed through.

To Assemble

  • Place hot waffles on a plate and top with non-dairy butter, berries and cinnamon syrup. Enjoy immediately!

Notes

  • For best results, allow batter to sit for 5-10 minutes before making your first waffle.
  • You usually need to cook these waffles a minute or two longer than most other waffles.
  • Keep all cooked waffles on a cooling rack placed on a baking sheet in an oven set on 150-200 degrees. This will keep your waffles hot and crispy until all of them are made. Now you and your family and friends can all enjoy your waffles together!

  • This recipe goes best with blueberries and strawberries, but you can try topping with raspberries and blackberries, too.
  • Have leftovers? You can pop the leftover waffles wrapped in plastic wrap in the freezer, and then simply reheat in the microwave or toaster when you're ready to eat!
