Cuisine: plant based, vegan
Servings: 4 servings

  • 12-15 medium or large hulled strawberries
  • roughly 30 medium-sized mint leaves
  • 4 dates, pitted and roughly chopped, Or, 1/4 c. maple syrup, plus more to taste
  • 3/4 cm fresh or bottled lemon juice (177 ml) fresh is definitely better tasting!
  • 1/4 c. granulated sugar (58 g)
  • 16 oz. water
  • lots of ice for the glasses
  • Optional Garnishes: whole strawberries mint sprigs and/or lemon slices

  • First, fill four glasses all the way up with ice.
  • Blend together the hulled strawberries, mint leaves, dates or maple syrup, lemon juice, sugar, and water in a high-powered blender (I used a bullet blender or Vitamix) until smooth.
  • Pour this magically d-lish mixture over the ice.
  • Garnish and serve!

  • If you want to turn this into a frozen lemonade, add the ice to your blender instead of your drinking glasses.
  • Looking to make your lemonade more "adult"? Feel free to add your alcohol of choice. Rum, tequila or vodka will likely taste the best.
  • Have leftovers? Store the rest in a pitcher in your fridge. It lasts for about three days!
