Nothing says comfort like the classic Rice Crispy Treat, but I’ll admit, they can be pretty tough to veganize. This is a recipe I’ve been working on perfecting on and off for months now, and I’m so happy to say that I now have a recipe that’s pretty darn great. I hope you think so, too!

- Using only a handful of all natural ingredients, this recipe couldn’t be easier to make and is so delicious.
- The addition of the chocolate chips adds an extra level of fun and deliciousness.
- This recipe is perfect to make with the whole family. Kids love it!
- These can easily be made into holiday themed treats by using colored or holiday themed sprinkles instead of or in addition to the chocolate chips.
Are there marshmallows in these Vegan Rice Krispie Treats?
- Nope! Which actually makes these even easier to make. The secret ingredient here is brown rice syrup, which acts as the sweet binder, replacing the marshmallows.
Can you replace the brown rice syrup with maple syrup?
- I wish I could say “yes”, but maple syrup just isn’t sticky enough to get the job done. Believe me – I’ve tried it! If you need help finding brown rice syrup, THIS is the brand I prefer.

How to Make Vegan Rice Krispie Treats with Chocolate Chips:
1. Grease a two quart dish such as a 7×11 pan or 8×8 pan and then set it aside for now.
2. In a large pot, melt the vegan butter over medium heat.
3. Then to that pot, add the brown rice syrup, maple syrup, vanilla, and salt, and stir to combine.
4. Add the crispy rice cereal and stir with a long handled spoon until all cereal is evenly coated.
5. Pour this mixture into your prepared pan.
6. Using the back of a spatula, press down very firmly across the surface to make it evenly flat. If you find that the crispy treats are sticking to your spatula, grease it and try again.
7. Immediately add the chocolate chips to the surface and press down firmly using that spatula one more time.
8. Allow the crispy treats to completely cool before cutting into them, at least 2 hours. Cut into bars using a very sharp knife.

Vegan Rice Crispy Treats with Chocolate Chips
Ingredients
- 3 Tbsp. non-dairy butter, plus more for greasing
- 1/2 c. brown rice syrup (119 ml)
- 1/4 c. + 2 Tbsp. maple syrup (90 ml)
- 1 tsp. vanilla extract (I like Cook’s Cookie Vanilla for this recipe)
- 1/2 tsp. salt
- 6 c. crispy rice cereal
- 1/3 c. mini or regular chocolate chips (62 g or 80 g) I use Enjoy Life mini chocolate chips
Before You Begin! I recommend measuring out all ingredients called for in this recipe so they are ready to go the moment you need them.
Instructions
- Grease a two quart dish such as a 7x11 or 8x8 pan with butter and then set it aside for now.
- In a tall stock pot, melt the vegan butter over medium heat.
- Then, to that pot add the brown rice syrup, maple syrup, vanilla, and salt, and stir to combine.
- Add the crispy rice cereal and stir with a long handled spoon until the cereal is evenly coated.
- Pour this mixture into your prepared pan.
- Using the back of a spatula, press down VERY FIRMLY across the surface to make it compacted and evenly flat. If you find that the crispy treats are sticking to your spatula, grease it and try again.
- Immediately add the chocolate chips to the surface and press down VERY FIRMLY using that spatula once again.
- Allow the crispy treats to set and cool completely before cutting into them, at least 2 hours. Cut into bars using a very sharp knife. Enjoy!
