5-Ingredient Roasted Veggie Pizza

Pizza night just got SO much easier with this incredibly simple 5-Ingredient Roasted Veggie Pizza! This pizza is so good, it will have your whole family asking for more.

Ingredients

  • 1 frozen cauliflower crust or other pre-made crust of choice
  • canned artichoke hearts
  • sun-dried tomatoes (look for soft ones, or the type packed in oil)
  • jarred roasted peppers
  • cashew pesto or any other vegan pesto
  • Optional: Bottled balsamic glaze - also found at Trader Joe’s! (look for Aged Balsamic if you can't find the glaze.)

Instructions

  • Prepare crust according to package directions.
  • Next, prep your veggies:
    Quarter 4 artichoke hearts, length-wise.
    Roughly chop 1/2 cup of the sun dried tomatoes.
    Dice about 1 cup of the roasted peppers.
  • Then, spread 3-4 Tb. (45ml-60ml) of pesto over the surface of the crust and then top with your prepped veggies.
  • Broil on the middle rack of your oven for about 4 minutes. Any longer and your tomatoes will burn!  Note: I typically place a cooling rack on top of a baking sheet and use this as the platform for broiling the pizza; this allows the crust to get a bit crispier. No broiler? No problem. Simply bake in a 375º oven until the edges and tips of the pizza are browned.
  • Remove pizza from oven, cut, and enjoy!

Notes

  • When finished, drizzle your pizza with balsamic glaze or aged balsamic, if desired! However, it's still great without it.
  • This pizza definitely doesn't need any cheese, but feel free to add a sprinkle of vegan cheese to the top before baking, if you so desire.
  • Not a fan of some of these veggies? Feel free to swap them out for any veggie you like!  Olives, corn or asparagus would work nicely in this recipe, just to name a few.
  • When buying cauliflower crust, make sure to check the ingredient labels - sometimes they contain cheese or eggs.
  • Have leftovers? When reheating, warm your slices up in a 375º oven for a few minutes to get that extra crunch back.
