Pizza night just got SO much easier with this incredibly simple 5-Ingredient Roasted Veggie Pizza! This pizza is so good, it will have your whole family asking for more.
WARNING: This pizza is SUPER addictive… honestly – it is SO delicious! The flavor combo of these 5 ingredients will send your taste buds into a whirlwind of bliss. I truly love this pizza and am craving it this very moment. Mmmm….
Why this Recipe Works:
- Using tons of flavor-blasting veggies, pesto, and a cauliflower crust, this is one of the healthiest yet tastiest pizza recipes out there!
- Using only a handful of simple ingredients, it’s very simple to double or even triple this recipe if you’re feeding a crowd.
- All of the vegan ingredients used for this pizza can be found at Trader Joe’s. But don’t worry – they can be found at most other major grocery stores, too!

How to Make 5-Ingredient Roasted Veggie Pizza:
1. Prepare crust according to package directions.
2. Next, prep your veggies:
- Quarter 4 artichoke hearts, length-wise.
- Roughly chop 1/2 cup of the sun dried tomatoes.
- Dice about 1 cup of the roasted peppers.
3. Then, spread 3-4 Tb. (45ml-60ml) cashew pesto over the surface of the crust, and then top with your prepped veggies.
4. Broil on the middle rack of your oven for about 4 minutes. Any longer and your tomatoes will burn. Note: I typically place a cooling rack on top of a baking sheet and use this as the platform for broiling the pizza; this allows the crust to get a bit crispier on the bottom and edges. No broiler? No problem. Simply bake in a 375º oven until the edges and tips of the pizza are browned.
5. Remove pizza from oven, cut, and enjoy!
We like to top our pizza with balsamic glaze (also found at Trader Joe’s), but if you can’t find balsamic glaze in your grocery store, then look for “aged balsamic.” Aged balsamic is syrupy and sweet just like the stuff labeled “balsamic glaze.”
Top Tips for Making 5-Ingredient Roasted Veggie Pizza:
- When finished, drizzle your pizza with balsamic glaze or aged balsamic, if desired! However, it’s still great without it.
- This pizza definitely doesn’t need any cheese, but feel free to add a sprinkle of vegan cheese to the top before baking, if you so desire.
- Not a fan of some of these veggies? Feel free to swap them out for any veggie you like! Olives, corn or asparagus would work nicely in this recipe, just to name a few.
- When buying cauliflower crust, make sure to check the ingredient labels – sometimes they contain cheese or eggs.
- Have leftovers? When reheating, warm your slices up in a 375º oven for a few minutes to get that extra crunch back.
