Course: Dessert
Cuisine: gluten-free, plant based, vegan
Keyword: Avocado Chocolate Mousse
Servings: 2 servings

Equipment

  • Blender

Ingredients

  • 3/4 c. dairy-free milk, such as almond, oat, soy or cashew
  • 1 ripe small or medium avocado
  • 6 pitted dates (about 2-inches in length each) if not soft, soak in very warm water for 10 minutes
  • 2 Tbsp. + 1 tsp. cocoa powder, plus more to taste
  • 1 tsp. lemon juice
  • 1/2 tsp. vanilla extract

Instructions

  • Place all ingredients in a high powered blender (I use the bullet-type)
  • Blend until lumps are no longer heard or seen, about 30 – 60 seconds. However, I do feel it’s an added bonus if I end up with a random “date chunk” in my mousse – YUM!
  • Scoop out the light and fluffy mixture into the serving dishes of your choice.
  • Chill in the fridge for 45-60 minutes.
  • Top with toppings of choice! I like chopped Enjoy Life brand Chocolate Chunks and Chips, which you can buy HERE. Nuts are good, too! For added sweetness, top with maple syrup or chocolate syrup.

Notes

  • For other topping ideas, try some chocolate or rainbow sprinkles, dried fruit, or even a light sprinkle of coarse salt!
  • Double or triple the recipe for more servings. You can store any leftovers in the refrigerator for one to two days.
