Sometimes, you just need a mug filled with warm, moist, chocolatey cake in ten minutes or less. Know what I’m sayin’? I felt this way today actually, but then thought to myself, “Hey, I bet I can make a version of mug cake (aka – cake for one!) that’s made with ingredients that ain’t so bad for ya.” (Yes, my grammar goes out the window when I think to myself!) And just like that, this Lighter Chocolate Mug Cake was born.

- I used healthier ingredients like garbanzo bean flour, ground flaxseeds, plant based milk, nut butter, and coconut sugar when creating this recipe. Therefore, this vegan mug cake has WAY more nutrients and slightly less calories than your traditional mug cake.
- This mug cake requires zero oil or butter, which also helps make it lighter.

How to Make this Lighter Chocolate Mug Cake:
1. In a small bowl, combine the ground flaxseed and water and set it aside for now.
2. Then, find a microwave safe mug that holds at least 12 oz. of liquid. FYI – this is the standard coffee mug size, so chances are you have plenty of mugs that will work! To the mug, add the flour, cocoa, coconut sugar, baking soda, salt, and 1 1/2 Tbs. of chocolate chips. Stir well.
3. Next, add the nut butter, vanilla, nut milk and the ground flaxseed/water mixture and stir again.
4. Microwave for just 90 seconds. When it’s done, top it with another 1/2 – 1 Tbs. chocolate chips. These babies will start to melt and act as the frosting – YUM! Allow this gloriousness to sit for 2 minutes before devouring.

Lighter Chocolate Mug Cake
Ingredients
- 1/2 tsp. ground flaxseeds + 1 Tbsp. water
- 3 Tbsp. garbanzo bean flour (or regular all-purpose flour) (23 g)
- 1 Tbsp. cocoa powder (5 g)
- 2 Tbsp. coconut sugar, regular granulated sugar, OR 3-4 packets of monk fruit
- 1/4 tsp. baking soda
- 1/8 tsp. salt
- 2 Tbsp. semi-sweet chocolate chips (30 g) divided
- 1 Tbsp. creamy almond OR mixed nut / seed butter, the runnier the better!
- 1/2 tsp. vanilla extract
- 3 Tbsp. cashew, almond or soy milk (45 ml)
Before You Begin! I recommend measuring out all ingredients called for in this recipe so they are ready to go the moment you need them.
Instructions
