Vegan and Gluten Free Lighter Chocolate Mug Cake with chocolate chips

Sometimes, you just need a mug filled with warm, moist, chocolatey chocolate cake in ten minutes or less. Know what I’m sayin’? I felt this way today actually, but then thought to myself, “Hey, I bet I can make a version of mug cake (aka – cake for one!)  that’s made with ingredients that ain’t s’bad for ya.” And just like that, this Lighter Chocolate Mug Cake was born!

Why this Recipe Works:

  • This chocolate mug cake is easy and fast to make.
  • This cake will knock those sweet chocolate cravings right out of the park, all with a handful of ingredients you can feel pretty darn good about.

What makes this mug cake lighter?

  • I used healthier ingredients like garbanzo bean flour, ground flaxseeds, plant based milk, nut butter, and coconut sugar when creating this recipe. Therefore, this vegan mug cake has WAY more nutrients and slightly less calories than your traditional mug cake.
  • This mug cake requires zero oil or butter, which also helps make it lighter.

How to Make this Lighter Chocolate Mug Cake:

1. In a small bowl, combine the ground flaxseed and water and set it aside for now.

2. Then, find a microwave safe mug that holds at least 12 oz. of liquid. FYI – this is the standard coffee mug size, so chances are you have plenty of mugs that will work!  To the mug, add the flour, cocoa, coconut sugar, baking soda, salt, and 1 1/2 Tbs. of chocolate chips. Stir well.

3. Next, add the nut butter, vanilla, nut milk and the ground flaxseed/water mixture and stir again.

4. Microwave for just 90 seconds. When it’s done, top it with another 1/2 – 1 Tbs. chocolate chips. These babies will start to melt and act as the frosting – YUM! Allow this gloriousness to sit for 2 minutes before devouring.

  • Remember to use a mug that holds at least 12 oz. of liquid – this is usually the size of your standard coffee cup. If you have one, opt for a larger mug to play it safe!
  • Having a party? This dessert is actually GREAT for guests! You can serve them in their own pretty mug, and they’ll feel so special. You could even leave out other toppings such as sprinkles, berries, Oreo crumbles,  chopped nuts, or shredded coconut, and let them dress up their cakes however they want! So fun.

Could I use soy milk instead of cashew or almond? I don’t keep cashew or almond milk around regularly and wouldn’t want it to go to waste. Thanks!

Yes – you can use soy milk instead! I’m sure any non-dairy milk would work just fine. 🙂

Oops, just noticed this also calls for monk fruit as well. I don’t mind higher sugar content. Can I just put in more coconut sugar instead?
