These lighter Tex Mex vegan tacos use jackfruit to replace meat in this deliciously easy taco recipe! Bonus: They’re ready to eat in 15 minutes.

Jackfruit has become very popular over the last couple of years because it resembles pulled meat in both look and texture.  But the great news is, because it’s technically a fruit, jackfruit is much healthier for you than pulled meat in many ways!

Why this Recipe Works:

  • All you need is 5 ingredients (that can be easily found at most grocery stores) and 15 minutes, and you’re ready to eat! This is truly the easiest vegan taco recipe around.
  • You would never guess that these tacos are meatless – trust me, you’ll love them.
  • These tacos are also surprisingly healthy! Jackfruit is a great source of fiber, vitamin C, and potassium, and the cabbage contains tons of antioxidants.

What is Jackfruit?

  • Jackfruit is a large tropical fruit that grows on trees and is in the fig family. It’s now being widely used as a meat replacer in many vegan recipes and it’s truly delicious!

As you can see, my little boy, Jack, LOVES tortillas. Thankfully, he let me take this photo before diving into them.

How To Make 5-Ingredient Tex Mex Jackfruit Tacos with Refried Beans:

1. Thoroughly mix together the cabbage and a hefty drizzle of seasoned rice wine vinegar. Set it aside.

2. Heat up both the jackfruit and the beans in separate pots via stovetop or bowls via microwave.

3. Next, warm the tortillas. I do this by placing them directly on the stovetop flame for about 10 seconds on each side. Use tongs to handle!

4. Assemble tacos by filling tortillas with jackfruit and then the cabbage blend. Beans can be enjoyed in the tacos or on the side.

  • shredded cabbage or cole slaw veg blend

  • 1 package tex mex jackfruit found near the meat alternatives section in grocery stores
  • canned refried beans

  • optional toppings: salsa, avocado

I tried this recipe and it was super good and tasty and easy and quick to fix the only difference is I used the can jackfruit because where I live in Wyoming they don’t sell the preseason bag jackfruit.
