5-Ingredient Vegan Fajita Tacos on a plate with avocado and refried beans

We love tacos here in the Dunham household, so I wanted to create an easy recipe to make them at a moment’s notice!

Why this Recipe Works:

  • Using only 5-Ingredients (including frozen veggies) this recipe is super easy to make and requires minimal prep.
  • The fajita seasoning also helps make this recipe incredibly easy and delicious.
  • This recipe is also great for meal prep – you can cook all of the ingredients up, store in the fridge, and reheat when you’re ready to eat.

What goes well with these vegan fajita tacos?

  • So many things! I like to serve these with some refried beans and avocado, but you can get creative. They go great with a homemade guacamole (like my Lighter Guacamole), rice (or cauliflower rice – try my Spiced Cauliflower Rice and Beans) any type of bean, a pico de gallo, or a fresh and crisp salad!
  • If you’re feeling even more festive, these also go great with my Blueberry Margaritas!

2. Transfer this mixture to a bowl and cover with a plate to keep warm.

3. To that same unwashed frying pan, add the frozen fajita veg mix, 1/4 cup water and a pinch of salt. Cook until veggies are hot and most of the water has evaporated.

4. Meanwhile, remove beans from the can and heat in a bowl in the microwave or in a pot on the stove.

5. Warm tortillas by placing them directly over the flame on the stove. About 30 seconds on each side. Use tongs to handle!

6. Assemble tacos by placing beef crumble mixture in tortillas followed by veggies. Enjoy the refried beans in the tacos or on the side. Yum!

Top Tips for Making Vegan Fajita Tacos:

  • Prepping the Beyond Meat Crumbles with water will help them to not stick to your pan.
  • If you don’t want to use the Beyond Meat Crumbles, heat up some black beans and throw them into your tacos instead.
  • Adding some avocado, hot sauce, or salsa will take these tacos to the next level.
  • You can absolutely use fresh veggies, but the frozen type tastes just as great without all of the prep work.
