5-Ingredient Vegan Fajita Tacos on a plate with avocado and refried beans

We love tacos here in the Dunham household, therefore I created this simple recipe to make at a moments notice any time tacos are craved or requested!

Why this Recipe Works:

  • Using only 5-Ingredients (including the option of using frozen veggies), this recipe requires very minimal prep.
  • The pre-mixed fajita seasoning also helps make these tacos incredibly easy and delicious.
  • This taco recipe is also great for meal prep – you can cook all of the ingredients, store in the fridge, and reheat and assemble when you’re ready to eat. Gotta love that.

2. Transfer this mixture to a bowl and cover with a plate to keep warm.

3. To that same unwashed frying pan, add the frozen fajita veg mix, 1/4 cup of water, and salt to taste. Cook until veggies are hot and most of the water has evaporated.

4. Meanwhile, remove beans from the can and heat in a bowl in the microwave or in a pot on the stove.

5. Warm tortillas by placing them directly over the flame on the stove. They only need about 30 seconds on each side. Use tongs to handle!
